1 lb. medium shrimp, peeled and cleaned.
10 small tomatoes (Poma), sliced.
Shredded cheese, mozzarella or jack.
Olive oil.

Directions:
Directions:
Saute shrimp in olive oil in skillet until pink. and curled. Remove from pan and place in casserole dish. Swish shrimp around to cover bottom of dish with olive oil. Saute tomato slices in same skillet in same olive oil as used to saute shrimp. Place tomatoes on top of shrimp in casserole dish. Sprinkle shredded cheese over the shrimp and tomatoes. Place under broiler until cheese is bubbling, approximately 8 to 10 minutes.
