1/2 c. butter
1 c. boiling water
1 c. all purpose flour
1/4 tsp. salt
4 large eggs
Chicken salad, ham salad, tuna salad or egg salad

Directions:
Directions:
Preheat oven to 450 degrees. Grease a cookie sheet. Melt butter in boiling water. Add flour and salt; stir vigorously. Cook, stirring constantly, until mixture forms a ball that doesn't separate. Remove from heat and cool slightly. Add eggs, 1 at a time, beating vigorously until smooth. Drop dough by heaping teaspoonfuls 2 in. apart on prepared cookie sheet. Bake in preheated oven for 15 min., then reduce heat to 325 degrees and bake for 25 additional min. Remove puffs from oven and split each one. Turn oven off and place cream puffs back in oven to dry out; about 20 min. Cool on rack. Fill with your favorite chicken, ham, tuna or egg salad just before serving. Yield: 24 puffs.
