6 - 7 lb. fresh beef brisket
1 C red wine
Peacock's Good Gravey
1 T salt
3 buds garlic minced
1/4 C pickiling spices - ground in pepper mill
2 T celery seed

Directions:
Directions:
Remove excess fat but leave a layer on top. Marinate over night in 1 C red wine. Dry meat thoroughly. Paint lightly with Peacock's Good Gravey. Rub with the following: salt, minced garlic, pickling spices and celery seed. Let meat stand 2 hrs. Put in 400º oven for 20 - 30 min. to brown, lower to 325º for 3 1/2 hrs. Baste every 1/2 hr. with drippings.
