Ingredients: 1-1/2 qts. fresh strawberries, rinsed and hulled 6 T. sugar 2 T. lemon juice 8 oz. cream cheese, softened 1-1/2 C. flour 1 tsp. soda 1/2 tsp. salt 2 large eggs 1-1/2 C. buttermilk 1 C. milk salad oil

Directions:FILLING: Thinly slice 2 C. strawberries and set aside in refrigerator. Whirl remaining strawberries until smooth. Whisk 1/4 C. sugar and the lemon juice into the strawberry puree. In the blender jar blend together 1/2 C. of the puree (set aside remainder) until well blended. Set aside. PANCAKES: Sift together dry ingredients including the remaining 2 T. sugar. Whisk together the eggs, buttermilk and milk just to blend. Whisk flour mixture into this until just evenly moistened. Pour 1/2 C. amounts unto greased hot griddle and bake until bubbles burst on top. Turn over and bake until browned on bottoms. As pancakes are done, transfer to baking sheets and keep warm in 200 degree oven. Coat each pancake with 2 T. of cream cheese mixture and roll up. Put 2 roll-ups on each plate, top evenly with sliced strawberries and drizzle with a little strawberry puree.
