1or 2 Onions 2-3 cloves of garlic
1carrot 1or2 celerystalks
1/4 cup parsley, (be creative and use any vegetable you might have in the refrigerator-examples; spinach, kale, broccoli, etc.)
Spices to use are garlic powder, bay leaves, oregano, basil (fresh too), thyme, marjoram and again, you Italians can be creative and add what you think will make it great. I add these in the amount I think will be good so I'm not sure how much to tell you. Of course I've seen 1/4 tsp. to 1 tsp. I think it's better if you add more. You also will use crushed tomatoes 1 can, 1lb 12oz or 28oz (fresh make the sauce even better:) ,
1 can of Paste12oz, and
1 can 1lb 12oz Tomatoe Sauce.
Add Wine at the end. (About 1/4 cup to 1/2 cup depending on how much sauce is made.
You can also add 1 can of beans to make it thicker. (This is also a good substitute for the meat products.)

Chop onions, garlic, carrots, celery and all other vegetables. Then add the spices. Quickly saute in Olive oil. At this point pour the crushed tomatoes and cook about a minute, then add the tomato paste and stir until fully even, then add the sauce. When done add the wine.

I learned this recipe by watching my Mom, Maria A. Mallia do this by adding ingredients in the fashion of a little of this and a little of that:) I learned it by making it with hamburger meat or Italian sausage but because of my health issues I had to learn how to adapt to a vegetarian method. My children say it's better and they won't order spaghetti in a restaurant because they prefer this sauce. I hope others will find this good too:)
