1 (3 1/4 lb) fresh beef brisket
1 lg onion, quartered
1 c chopped celery
2 tsp salt
1/4 tsp pepper
2 bay leaves
4 med potatoes, pared & quartered
6 sm carrots, pared & halved crosswise
1 pkg (10oz) frozen peas, unthawed
1/3 c unsifted flour

Directions:
Directions:
Wipe brisket with damp paper towels. Slowly heat lg Dutch oven. Add brisket, fat side down; brown slowly, turning about 15 min in all.

Add onion, celery, salt, pepper, bay leaves, & 1 qt water; bring to boiling. Reduce heat; simmers, covered, 2 1/2 hrs, or until almost fork tender.

Add potatoes, carrots & peas; simmer, covered, at least 30 min, or until beef & vegetables are tender.

Meanwhile, in sm bowl, combine flour & 1/2 c water, stirring until smooth. Stir into liquid in Dutch oven; bring to boiling. Reduce heat; simmer, uncovered, 5 min.

Serve brisket with gravy & vegetables.
