Center Cut or Maple-flavored Bacon

1. For turkey bacon, place a single layer of strips close together on four (4) sheets of paper towel. It is OK for strips to touch, but don't overlap. Cover with 2 sheets of paper towel. Place paper towel and bacon directly on the rotating glass plate in microwave and cook about 4 minutes or until desired doneness is achieved. Let bacon sit a minute then remove and place on a plate lined with 2 sheets of paper towel.
2. For pork bacon, follow exactly the same process as above but place bacon on six (6) layers of paper towel and cover with 2 sheets. Microwave about 4 1/2 minutes or until desired doneness is achieved.

John developed this method of cooking bacon years ago as a means of extracting as much fat from the bacon as possible. It takes a roll of paper towels to do about 4 packages but it is worth it in terms of taste. I prep the paper towel/bacon packages, stack them up by the microwave and just keep cooking as I do other things in the kitchen. With a son that can eat a pound of bacon at a sitting, I like to keep several pounds of both varieties cooked and in the fridge for quick breakfasts. And the adults love having bacon on hand for BLTs.
