2 c. orange juice
2 c. chicken broth
2 t. tarragon
4 chicken breasts, cut into 2 in. cubes
2 T. butter
1 T. cornstarch

Directions:
Directions:
1. In large skillet, heat orange juice, chicken broth and tarragon over medium high heat to almost boiling. Add chicken, reduce heat to medium and cook until almost done, about 7 minutes. Remove chicken from liquid with slotted spoon and keep warm in covered bowl.
2. Cook liquid until reduced to about 2 cups.
3. In small bowl, mix cornstarch with small amount of liquid. Add to skillet. Add butter. Mix to combine and continue to cook until sauce is thickened.
4. Return chicken and accumulated juices to skillet and heat until chicken is warm. Serves 4.
