4 t. olive oil
2 large shallots, minced
1 1/2 c. long grain white rice
1/2 c. chopped pistachios
1 14 oz. can chicken stock
1/2 c. fresh lemon juice
1/2 t. salt
2 1/2 T. julienned lemon peel (1 in. pieces)

Directions:
Directions:
1. Heat oil in large heavy saucepan over medium heat. Add shallots and saute 3 minutes. Add rice and 2 T. pistachios; stir 2 minutes.
2. Stir in 1 can broth, lemon juice and salt. Bring to boil. Reduce heat to low; cover and cook until liquid is absorbed and rice is tender, about 20 minutes.
3. Mix in 4 T. pistachios and 2 T. lemon peel. Season with salt and pepper.
4. Transfer to serving bowl. Sprinkle with remaining 2 T. pistachios and 1/2 T. lemon peel. Serves 8.
