4 lb St. Louis cut ribs
1 lb brown sugar
2 T ground cloves
2 T Chinese five spice
2 T allspice
1 T dry mustard
3 T salt and pepper
1 T Old Hickory spicy salt
1/2 c olive oil

Directions:
Directions:
Mix all ingredients and use as a rub. Rub ribs with dry rub till covered, wrap in heavy foil, place on large cookie sheets and cook at 250º for 2 1/2 hours. Save some rub for grilling. Mix the extra rub into the olive oil for basting. Remove ribs from foil, place on hot grill, heal and burn till crusty.( Coat with oil mixture and cook on high heat to make it crusty.

Spencer worked for several years to come with the perfect ribs. He did a great job. You can use baby back ribs instead of St. Louis if you like.
