2 kg pork baby back ribs (or other cut of ribs)
salt and pepper

Home-made BBQ sauce (recipe below) or a bottle of your favorite Hickory barbeque sauce

Home-made BB Sauce:
1 c ketchup
1/4 c Apple cider vinegar
5 Tbsps of dark brown sugar
2 Tbsps Worcestershire sauce
1 tsp liquid smoke
1/2 tsp salt

Preparation of ribs:
Season ribs with salt and pepper. Place ribs in a large pot and fill with enough water to cover ribs. Bring water to a boil, reduce heat, cover and simmer for 1 hour, or until ribs are fork tender. Cover tender ribs with half of the BBQ sauce. Marinate 2 hours or overnight in the refrigerator. At this point, you can freeze the ribs and cook for later.

Prepare Home-made Barbeque Sauce:
While ribs are boiling, combine ingredients for home-made BBQ sauce in a medium sauce pan and bring to boil. Reduce heat and simmer, uncovered, stirring often for 30 minutes, or until thickened. If you have the ribs marinate with this sauce for a day or two, they get really tender.

How To Cook Ribs:
Oven Broil Method: Set your oven to broil at least 20-30 minutes before using. Place marinated ribs, meat side down on a broiler pan. Brush ribs with the sauce, and broil ribs for 6-7 minutes. Turn ribs over, brush with remaining sauce, and broil additional 6-7 minutes or until edges are slightly charred. Remove ribs from broiler, brush with sauce, and serve.

Charcoal grilling: Grill the ribs on an oiled rack set 4-5 inches over glowing coals, meat side up, brush with sauce, turn ribs and grill on the other side until done. Brush ribs with more sauce before serving.

I have done this tender delicious ribs for many of our family gatherings. This is the type of dish that you can prepare ahead of time and then freeze. When you feel like serving ribs, just thaw and broil the ribs. I'm sure your guests and family will love this too.
