1 boneless pork loin roast (4-1/2 lbs )
1/3 c. olive oil
1 tbs. whole grain mustard
2 tabs. dried minced onion
1tsp. coarse grind garlic powder

Directions:
Directions:
In a ziplock bag, mix together olive oil, mustard, onions, garlic powder and black pepper. Place the loin in the bag and seal. Turn over accasionally to make sure all the meat is coated with the marinade. refrigerate overnight. Set loin roast to room tenperature for about 1 hr.Heat oven 350. Place roast on a rack in a baking pan. Bake uncovered for 25-30 min.per lb.. Remove from oven and let rest for 20 min. before slicing.
