Two eggplants peeled and sliced ¾ to 1 inch thick
1 large onion chopped
1 pound hamburger or ground turkey
2 tsp. of pomegranate concentrate (you can leave out if you don’t have any)
½ tsp. cinnamon
½ tsp. pepper
Salt to taste
½ cup pine nuts
½ cup sliced almonds
4 tbsp. of butter
2 cans tomato paste
1 tbsp. honey

Slice and salt eggplants and let sit for 20 – 30 minutes to sweat.

Saute onion with meat until onion is tender and meat is brown. Add pomegranate, cinnamon, salt, and pepper to meat mixture.

Brown pine nuts and almonds in the butter until just slightly browned and add to meat mixture.

Squeeze moisture out of eggplant and place one layer in a greased baking dish. Place meat mixture over the layer of eggplant and then layer the remaining eggplant on top of the meat.

Mix tomato paste with one cup of water and the honey and pour on top of casserole. Add enough water to just below the top of the eggplant. Layer sliced tomato on top and bake at 350° for one hour.
Serve over rice.
