2 chicken breasts, cooked and diced 1 lb. Russet potatoes, cooked and diced 2 c. corn kernels (frozen) 1/4 c. onion, diced 1/4 c. red bell pepper, diced 1 c. chicken stock 1 chicken bouillon cube 1 c. heavy cream 1 c. milk 2 t. sugar 2 t. hot sauce 2 T. fresh parsley, chopped
1. Bring chicken stock and bouillon cube to boil. 2. Add remaining ingredients except parsley and hot sauce. Simmer for 40 minutes. 3. Add parsley and hot sauce and simmer for 5 minutes. Serves 8.
The source for this recipe is the wonderful and eclectic Boma Restaurant in the Animal Kingdom Lodge at Disney World. Boma features foods of Africa. All the soups and stews are to die for but this is my favorite.
