1-2 “Heads” Of Veggie Of Choice

Directions:
Directions:
Wash and prepare greens or broccoli and put into a pot with enough water to keep from burning as they cook, (or you can steam greens in a steamer.)
Cook until fork tender, drain but reserve the water.
Meanwhile, add a few tablespoons of good quality olive oil to the bottom of a large skillet and start to heat,
Dice onions (1-2 med size) and (a lot) of garlic and add to heated skillet.
Cook until soft and the garlic is lightly browned (don’t burn it!)
Add salt.
Put the drained and partially cooked greens into the skillet.
Add some of the reserved liquid and keep it on hand in case you need to add more liquid to the skillet to keep it from burning.
Gently Stir, Cover, and Simmer for about a half hour to let the flavors absorb.
Serve with a little lemon.

{Recipe for broccoli, cauliflower, spinach, escarole, or whatever your favorite “green” food is (Papa usually made this with broccoli, spinach and escarole.) This makes the veggies very soft and mushy - they are not supposed to be crisp and green and crunchy
*This tastes even better the next day.
*You can use this mixture as the stuffing for Italian stuffed bread.
*Be sure to save the vegetable water as a healthy base for soups and to cook rice or other starches.
