Soft Ginger Cookies Recipe

2c. flour
21/2 tsp. ground ginger
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ground cloves (or allspice)
3/4 tsp. salt
3/4 c. chopped crystallized ginger
1c. firmly packed brown sugar
1/2 c. crisco at room temp.
1/4 c. butter or marg. at room temp.
1 large egg
1/4 c. molasses

Directions:
Directions:
In a small bowl, combine first 6 ingredients and whisk to blend .
Mix in crystallized ginger and set aside.
In a large bowl beat brown sugar, shortening and butter until fluffy.
Add the egg and molasses and beat until blended.
Add the flour mixture and mix until blended.
Cover and refrigerate for 1 hour.
Preheat oven to 350º and lightly butter baking sheets.
Use wet hands to form 1" balls.
Roll the balls in granulated sugar or turbanato sugar.
Bake 8-9 minutes until cracked on top and soft to the touch.

These are one of my most requested cookies. They stay soft and the crystallized ginger makes them a little special. If you like ginger these are the cookies for you!
