1 1/2 c. cider vinegar
1/2 c. water
2 T. sugar
1 T. salt
1 t. black peppercorns
1/2 t. mustard seeds
1/2 t. dried dill
2 bay leaves
2 c. small cauliflower florets
2 c. (3 inch) diagonally cut asparagus
1 1/2 c. green beans, trimmed cut in 3 inch lengths
1 c. (1/4 inch) diagonally cut carrots
1 cup red bell pepper strips
6 green onion bottoms, trimmed
4 cloves garlic, halved

1. Combine first 8 ingredients in large saucepan. Bring to boil, reduce heat and simmer 3 minutes. Place remaining ingredients in large heavy duty ziploc plastic bag. Pour vinegar mixture carefully over vegetable mixture.
2. Seal bag and refrigerate overnight or at least 8 hours. Remove vegetables from bag with slotted spoon. Discard bay leaves. Serves 6.

Again, feel free to leave the vegetables in the vinegar mixture longer. The "pickling" effect doesn't seem to get stronger the longer you leave it so, this a great make ahead dish. Goes great with ham for Easter dinner.
