1 bag (16 oz.) coleslaw mix
1 can (11 oz.) mandarin orange segments, drained
1 small jicama (about 1 pound), peeled and cut into 1/2 inch cubes (2 cups)
1/2 c. Italian dressing
2 T. peanut butter
1 T. soy sauce
1/2 c. peanuts

Directions:
Directions:
1. Toss coleslaw mix, orange segments and jicama in large bowl.
2. Combine Italian dressing, peanut butter and soy in small bowl and whisk until smooth.
3. Toss dressing with coleslaw mixture. Sprinkle with peanuts. Serves 12.
