1 1/2 pounds cooked peeled deveined shrimp, thawed if frozen
1/2 c. tomato juice
1/4 c. vodka
1/2 t. red pepper sauce
1/2 t. sugar
1/2 t. celery salt
2 T. chopped fresh parsley
1 c. cocktail sauce
1/4 c. finely chopped celery
1/4 c. finely chopped green onions, including some green part

Directions:

1. Heat tomato juice, vodka and pepper sauce to boiling over medium high heat. Stir in sugar; reduce heat. Simmer uncovered for 5 minutes, stirring occaisionally. Stir in celery salt and parsley.
2. Place shrimp in large resealable bag. Pour juice mixture over shrimp and refrigerate at least 3 hours. I have let the shrimp marinade overnight with no ill effects.
3. Mix cocktail sauce with celery and green onions. Remove shrimp with slotted spoon and arrange on platter. Serve with toothpicks and sauce. Makes 4 to 6 first course servings.

I like to serve this in individual shrimp cocktail bowls (or ceramic Easter baskets at Easter). I make a "bed" of shredded romaine lettuce, arrange the shrimp and put the sauce on top. This method is great if you want to serve these as a first course for a dinner party.
