4 c. thinly sliced zucchini (unpared)
1 c. Bisquick
1/2 c. finely chopped onion
1 c. Monterey Jack cheese, grated
2 T. chopped parsley
1/2 t. salt
1/2 t. seasoned salt
1/2 t. Italian seasoning
1/4 t. garlic powder
dash ground black pepper
1/4 c. vegetable oil
4 eggs, slightly beaten

1. Preheat oven to 350 degrees. Grease 13" x 9" pan.
2. Mix all ingredients thoroughly. Spread in pan.
3. Bake until golden brown, about 30 to 45 minutes.
4. Cool, cut into small squares.

This is an oldie but goodie. Even people who aren't wild about zucchini will eat these. Cut squares freeze well and reheat easily.
