Combine in pan:
4 ½ cups sugar
1 cup cornstarch
2 teaspoons ground cinnamon
¼ cup nutmeg
1 teaspoon salt
10 cups water
Bring to a boil, stirring constantly, until thickened.
Stir in:
3 tablespoons lemon juice
2-3 drops yellow food coloring
5-6 pounds peeled, cored, and sliced apples

Scoop into sterilized quart jars. Process to seal.
