1 T olive oil
1 onion, finely chopped
1 clove garlic, chopped (I use 4 or 5)
2-1/4 cups chicken broth
1 tsp. dry oregano leaves
1 cup brown rice
Sliced olives to taste
2 T Sun Dried Tomato Strips (Optional)

Directions:
Directions:
Heat oil over medium heat & cook onion, stirring occasionally, 3 minutes or until soft.
Add garlic & cook 30 seconds.
Stir in chicken broth & oregano.
Bring to boil; stir in rice.
Cover & simmer over low hear 40 minutes.
Stir in olives & tomatoes
Cover; remove from hear & let stand 5 minutes.
