2 lbs. chicken thighs
1 large lemon, rinsed
8 tbls. (1 stick) unsalted butter, melted
1/2 c. cider vinegar
1/2 c. packed, dark brown sugar
1/4 c. Worcestershire sauce
1 medium onion, thinly sliced
4 cloves garlic, thinly sliced
1 jalapeņo chile, thinly sliced
1/2 tsp. coarse salt (kosher or sea)
1/2 tsp. freshly ground black pepper

Cut the lemon into 1/4 inch slices, working over a bowl to catch the juices. Using the tines of a fork, remove any seeds from the lemon slices and place the slices in the bowl. Place the butter, vinegar, brown sugar, Worcestershire sauce, onion, garlic, chile, salt, and pepper in a non-reactive saucepan and bring to a simmer over medium heat, stirring with a wooden spoon until the sugar is dissolved (3-5 min). Pour the mixture into the bowl with the lemon and stir to mix. Cool to room temperature. While it is cooling, place the chicken thighs into a 9x13 pan. Pour the marinade over them, cover, and refrigerate overnight. If you make the marinade ahead, use it within an hour of making and stir it before using to mix in the melted butter. When the chicken is done marinating, remove it, add some salt and pepper, and either bake it, or even better, grill it over indirect heat. Enjoy!

It is delicious as is, but you can add Honey-Pepper Barbecue Sauce to make it out of this world.
