6 large bell peppers (2 each red, yellow and green)
1 cup olive oil
1/2 cup white wine vinegar 1 clove garlic, mashed
1/2 tsp. salt
1/2 tsp. oregano
1/2 tsp. basil
1/4 tsp. pepper

Directions:
Directions:
Line a cookie sheet with aluminum foil. Cut the peppers in half and brush with olive oil and place the peppers on the foil, cut side down. Roast the peppers in the oven broiler until very dark brown and blisters appear. Immediately place the peppers in a plastic bag until they are cool. Remove the skin and then trim and cut into thin strips. Combine the roasted pepper strips with the rest of the ingredients, cover and chill.
