1 medium potato
2 lbs powdered sugar
peanut butter as needed

Peel and dice potato. Place diced potato in small sauce pan. Cover potato with water and boil or steam potato until soft. Drain potato and place in mixing bowl. Beat until mashed. Add 1/2 of the sugar and mix well. Blend in remaining sugar while scraping down sides as needed.

Line a counter top with a sheet of waxed paper dusted with powdered sugar. Scrape out dough onto waxed paper and dust top with more powdered sugar. Roll out to a thickness of about 1/4 of an inch. Spread peanut butter evenly over dough surface. Roll dough up into a log.Cut log into halves. Place waxed paper around each log. Put log halves into a one gallon zipper seal plastic bag. Place into refrigerator to cool and set up. When ready to serve, remove waxed paper and slice dough into about 1/4 inch thick dollar slices. Store leftovers in refrigerator until next usage.
