1/2c. crunchy peanut butter
1c. butter softened
3/4c. packed light brown sugar
3/4c. granulated sugar
2 eggs room temperature
1-1/2t. pure vanilla extract
3c. all purpose flour
3/4t. salt
1/2t. baking soda
1/2t. baking powder
4-5c. crushed plain potato chips, divided
1c. salted Spanish peanuts
1c. Kraft Carmel Bits. Can be found at WalMart

Directions:
Place peanut butter and softened butter in mixer and cream until fluffy. Add both sugars and beat again. Add eggs one at a time. Ad vanilla.
Combine flour, salt, baking soda,baking powder together in a mid. bowl. Mix thoroughly. With mixer on low speed, add dry ingredients and mix until dough comes together. Once dough is formed, add 2c. of crushed potato chips, the peanuts and carmel bits and mix until incorporated.
Drop tablespoon size balls into remaining crushed potato chips and roll to coat balls.
Place dough on parchment lined baking sheet, spacing 2" apart. Bake at 350º for about 12-14 mins. or until cookies are light and golden on the edges.
Cool completely and store at room temperature in tightly sealed container.
