2 cups of all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp. instant espresso powder
1 tsp. table salt
1 stick of butter (room temperature)
1 cup packed brown sugar
1 egg
1 tsp. vanilla extract
1 cup milk

FILLING;
1 stick of butter (room temperature)
8 tbsp vegetable shortening
1 cup marshmallow creame
1 tbsp vanilla extract
1 1/2 cups of sifted powdered sugar

Pre heat oven to 350. Line baking sheets with parchment paper. Whisk together flour, cocoa espresso powder, baking soda and salt in a bowl- set aside.
Cream butter and brown sugar together in a large bowl wit a hand mixer on medium speed until light & fluffy. Beat in egg and vanilla combined. Alternately mix flour mixture and milk into the beaten ingredients, beating just until combined.
Scoop or pipe batter ionto prepared baking sheets into 2 1/2 inh circles. Leave an inch between circles. Should have 24 whoopie cookies to to make 12 whoopie pies. Bake whoopies until edges are set and they springs back when touched- 10 to 12 minutes ot so.
Remove whoopies from oven, let cool on baking sheets 5 minutes then transfer to a cooling rack to cool completely before filling.
FILLING:
Cream butter and shortening in a bowl with a hand mixer on medium speed until combined. Beat in marshmallow creme and vanilla. Continue beating adding powdered sugar until fully incorporated and filling is fluffy.
ASSEMBLE:
Pipe filling onto one of whoopie cookies. Top with other half of cookie.
