1 tbsp ground flaxseed (equivalent of 1 egg)
3 tbsp water
3/4 cup non-dairy margarine, Becel, Earth Balance
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 tsp vanilla extract
1-1/4 cups flour
1/3 cup unsweetened cocoa powder
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 cup semisweet chocolate chips, President's Choice "Decadent" chocolate chips are vegan

Preheat oven to 350º

1. In a grinder, whip the flaxseed and add to water a heat until mixture thickens. Set aside.

2. In a large mixing bowl, beat the margarine and sugar until light and creamy. Add the flax mixture and vanilla. Mix.

3. In a separate bowl, sift the flour, cocoa powder, baking soda, baking powder, and salt. Add this dry mixture to the wet mixture in batches, and mix until everything is well combined. Add an extra drop of water or soy milk if mixture seems a bit dry.

4. Stir in the chocolate chips. Form into balls, or drop by teaspoonful on cookie sheet lined with parchment paper. Bake 7 - 12 minutes, or until slightly browned on the bottom.
