4 Cups Chopped Zucchini
1 Small Onion, Chopped
4 Eggs
1 Cup Biscuit Mix
1/2 Cup Canola Oil
1/4 Cup Processed Cheese (Velveeta)
1/4 Cup Parmesan Cheese
1/4 Tsp. Salt
1/4 Tsp. Pepper

Directions:
Directions:
Combine all ingredients in a large bowl. Pour into a greased 9 inch square pan. Bake at 350 degrees for 45 minutes or until browned.

To vary the taste you can vary cheeses or amounts. For example: use cheddar in place of processed cheese or use only processed cheese and no parmesan.
