About 3 lbs. of country ham, cornmeal mix (I guess about 1 1/2 cups.

Put the country ham in a large pot, cover with water and boil until the lean meat is tender and the fat is rendered. Let cool. Keep the liquid and the lean meat, throwing the skin, bones and fat away. Bring this mixture back to a boil

Put the cornmeal mix Into a heat proof bowl. Ladle some of the hot liquid into the cornmeal mix until it is all moist. With a spoon, drop lumps of this mix into the hot broth. DO NOT STIR or your dumplings will make mush. Lower the heat and let the mixture (dumplings) cook through. Add the lean meat, salt and pepper to taste.
