2 1/2 C. all purpose flour, 1 t. baking powder, 1/4 t. salt, 1 C. butter, 1 C. sugar, 1 large egg, 1 t. vanilla, 5 T. raspberry, strawberry or apricot jam.

Preheat ovento 350º. Combine flour, baking powder and salt in medium bowl and set aside. Beat butter with sugar in large bowl until fluffy. Beat in egg and vanilla. gradually beat in flour mixture on low speed just until blended. Form dough into ball, divide in half. Roll each half in wax paper or plastic wrap till it is about 1/4 inch thick. Cut out cookies with 2 1/2 " round cookie cutter. Cut out centers of 1/2 of the cookies with 1 inch round cookie cutter..Bake 9 minutes or until edges are slightly golden. Remove to wire rack and cool. Just before serving put 1/2 t. jam on each whole cookie, then top with the cut out cookies. Sprinkle with confectioners sugar. TIP; Chill dough for easier rolling

These can also be cut into diamond shapes, put the jam on the center of the cookie, pinch two opposite sides together in the center. Bake and sift with confectioiners sugar. This is similar to the "keiflin" cookies that Grandma Dorothy used to make at Christmas
