"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
2 lbs. Velveeta cheese 1 can jalapeņo hot peppers l large white onion 1 pint mayonnaise juice of 1 lemon garlic to taste
In a meat grinder (or food processor) grind peppers, cheese, garlic and onion. Run through grinder 3 times (or in the food processor until well mixed). Add mayonnaise and lemon juice. Let sit in the refrigerator overnight. Serve with chips.
Serve with your favorite cracker. Tainty (my great Aunt Margaret LaHay who lived until she was 99) gave this recipe to me. It is a little hot (picante). Very good party snack.
