2 c. sugar
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 c. carrots, shredded
1 c. nuts, chopped
1 c. coconut
1 1/2 c. oil
3 eggs
1 c. crushed pineapple and juice
2 tsp. vanilla

Directions:
Directions:
Mix together sugar, flour, soda, cinnamon, salt, carrots, nuts, and coconut. Make hole in middle and add oil, eggs, pineapple and its juice, and vanilla. Mix well. Bake at 350 for 45 minutes or until done.
