3 or 4 large firm green tomatoes
Salt
2 cups vegetable or peanut oil, for deep-frying
1 cup buttermilk
2 cups self-rising flour
Freshly ground black pepper

Directions:
Directions:
Slice the tomatoes 1/4-inch thick. (Use a serrated knife)
Lay tomato slices out on a shallow baking pan lined with parchment paper or wax paper and sprinkle with salt on both sides.
Place the tomato slices in a colander and allow time for salt to pull the water out of the tomatoes, approximately 30 minutes. (This process makes the tomatoes not be soggy).

In a skillet, heat the oil for deep-frying over medium-high heat. (I used a fry pan & browned on both sides).

Dip the tomatoes into buttermilk, then dredge them into flour with a dash of pepper.
Deep-fry until golden brown. Drain. Keep warm.

The salt trick drawing out the water works great. The crust stays on good turning golden brown & they hold their shape without being soggy.
