Ingredients:
9 inch deep dish pie shell

1 c. confectioner sugar
1/2 c. smooth peanut butter

2 c. milk
2/3 c. sugar
dash salt
1 t. vanilla
3 eggs, separated
4 T. cornstarch

Meringue:
3 egg yolks (saved from above)
1/4 c. sugar

Directions:
Before baking my pie crust, I rub soft butter lightly on top of the crust bottom so it will not turn soggy later.

Bake empty pie shell according to directions. Cool.

In a small bowl cut confectioner sugar into peanut butter with a fork until mixture is crumbly.
Place 1/2 of mixture in bottom of baked pie shell, reserve remainder.

In large saucepan, place egg yolks, milk, sugar, vanilla, salt & cornstarch.
Cook over medium to medium low heat until thick, stirring constantly.
Pour over peanut butter in pie crust.

Beat egg whites until foamy.
Add sugar. Continue beating until soft peaks form.
Spread over top of pie, being careful to seal edges.
Sprinkle remainder of peanut butter crumbles over top of pie.

Bake 325 for 30 minutes. Cool.
Refrigerate for several hours.

Personal Notes:
We love to eat Peanut Butter Pie at Edna's. Even thought this is not their recipe, it is the closest I've been able to find. Our Grandkids all love to go to Edna's. We tell them "Who wants to go to Edna's raise your hand." Their little hands go up fast. They love to go eat here but I think they love just being together even more.

This pie is Corey's favorite and very easy to make. I double the recipe & make 2 pies. Delicious.
