2 eggs
¾ c. sugar
2/3 c. oil
2 c. flour
2 tsp. vanilla
2 tsp. baking powder
1 tsp. lemon zest

Directions:
Directions:
. Beat eggs and stir in oil, vanilla, and lemon zest. Blend in sugar
2. Sift together flour, baking powder and add to egg mixture
3. Drop by tsp full onto ungreased cookie sheet.
4. Press down top of each cookie with glass dipped in sugar
5. Bake at 400 for 8-10 mins. Remove immediately from cookie sheet to cool.
