2.5 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon sald
1 cup unsalted butter
3/4 cup granulated sugar
1 teaspoon pure vanilla extract
2 cups chocolate chips
1 cup walnuts, chopped
2 large eggs
4 cups vanilla ice cream (or your favorite flavor)

Preheat the oven to 375 degrees. Lightly grease 2 large baking sheets. In a bowl, combine the flour, baking soda, and salt. Set aside. In a separate bowl, beat the butter, sugars, vanilla extract, and 1/2 cup water until creamy. Fold into the flour mixture until completely combined. Stir in the chocolate chips and walnuts. Set aside one third of the dough. Add the eggs to the remaining two thirds dough. Mix with a wooden spoon or and electric mixer until thoroughly incorporated. Drop the egg dough in 1-tablespoon balls onto the baking sheets. Bake for 10 to 12 minutes until golden. Let cool and remove from the baking sheets with a spatula. Break the reserved dough into 1-teaspoon pieces and stir them into the ice cream. Freeze for 10 minutes.

Assemble the pops: Put 1 scoop of the ice cream on the bottom side of one of the cookies, spreading the ice cream evenly with a spatula. Cover with another cookie. Press together gently. Insert sticks into the ice cream. Serve immediately or, if you can wait, put it in an airtight container and freeze for 1 hour.
