1- whole untrimmed brisket (they can be from 10 to 14 pounds)

¼ cup of worcestershire sauce

1 ½ to 2 cups of Texas BBQ Rub(www.texasbbqrub.com)

Cover your meat with Worcestershire sauce (or your favorite liquid), rub on Brisket Rub over the Worcestershire sauce until you get a nice gooey mixture on the meat - let sit in refrigerator overnight to marintate. The next morning, put the brisket on the smoker, fat side DOWN.

Cook/smoke at a low temperature (225º) for 8-15 hours. Internal temp should reach 195º.

Realistically, it is hard to maintain a smoker at a constant heat for that long. I typically smoke my brisket for 2-3 hours and then bring it inside and wrap it in foil, then put it in the electric turkey roaster at 225º for another 6-8 hours. When brisket is ready, unwrap from foil, and let it "rest" on the carving block for at least 30 minutes, then slice thinly (1/4" against the grain) and serve.
