1 1/4 c. sugar
1/2 c. butter
2 lg. eggs
1/2 c. buttermilk
2 1/2 c. flour
1 tsp. salt
3 med. bananas, mashed
1 tsp. vanilla
1 tsp. baking soda
1 c. chopped nuts (optional)

Directions:
Directions:
Preheat oven to 350 and grease 1 loaf pan. Mix sugar and butter in large bowl. Stir in eggs until well blended. Stir in bananas, buttermilk, and vanilla; beat until smooth. Stir in flour, baking soda, and salt, just until moistened. Stir in nuts at this time if you choose to. Bake 1 hour and 15 minutes or until toothpick inserted in center comes out clean. Let cool for 10 minutes before taking it out of pan. Let cool on rack completely before slicing.
