1 fresh pork loin roast (any size)
Pork Rub from miscellaneous section
1 bottle of Heinz 57
1 cup honey

Purchase fresh pork loin roast. Bring home, unwrap and season liberally with pork rub. I'm talking liberally, don't be stingy with the rub. Wrap in saran wrap or large zip lock bag and put in refrig overnight. (If you use saran wrap, lay in a dish so it doesn't leak all over. Next day get your charcoal fire going and let coals go to gray. Make the baste in a sauce pan. Mix Heinz 57 and honey and just bring to boil. Inside, unwrap your roast. Season again and wait for fire to get ready. (This time lightly season) Once fire is ready, put roast over hot coals and keep moving to sear entire outer surface. Once seared, move to indirect heat start basting with sauce and cook until probe thermometer hits 150 degrees. (Baste frequently when checking temp) Pull off grill, bring inside and immediately wrap tightly in foil. (Use glass baking dish to set in, it may sweat) Let rest for 10 to 30 minutes. When ready to serve slice as preferred from thin to slab, whatever you like. Serve with basting sauce that is left for dipping.

This roast will cook after you take off grill. The foil sends the heat to the center. It will be the tenderest, most juicy pork roast you've ever had. I cooked this with my friends Marty and Jerry for Father Connelly's 25 anniversary in the priesthood. Don't skip any of the steps.
