2 tablespoons finely chopped onion
1 1/2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon lime juice
1 1/2 teaspoons minced garlic
1 1/2 teaspoons ground New Mexico chiles or Hungarian paprika*
1 teaspoon coarse salt
1 1/2 tablespoons olive oil, divided
1 (about 3-lb.) whole chicken
8 lime wedges

1. Combine all ingredients except oil, chicken and limes in small bowl. Stir in 1 tablespoon of the oil to form wet paste.

2. Place chicken, breast-side down, on cutting board. With sharp kitchen scissors, cut down one side of backbone, cutting through rib cage. Cut down other side of back bone; remove and discard backbone. Turn chicken breast-side up; flatten with heel of your hand. Place in nonreactive baking pan; generously rub marinade over both sides of chicken and under skin. Cover and refrigerate 8 to 24 hours.

3. Heat grill. Grill chicken with marinade skin-side down, covered, over medium-high heat or coals 5 minutes or until skin begins to color and grill marks form. Turn; grill an additional 5 minutes. Reduce heat to medium-low; grill, covered, 30 minutes or until no longer pink and internal temperature reaches 170°F., basting once or twice with remaining 1/2 tablespoon oil.

4. Remove chicken; cover loosely with foil. Let stand 10 minutes before carving; serve with lime wedges.

TIP *New Mexico chiles, also called California chiles, are dark red, dried chiles with a medium-hot flavor. Find them ground in the spice section, or look for them in the produce section where other dried fruits and vegetables are sold and grind them in a spice grinder.
