1 stick butter (can use less)
2 medium onions chopped fine
1/3 cup celery chopped
2 large cloves garlic chopped fine
4 large potatoes diced fine
3 cubes chicken bullion (or chicken stock)
1/2 cup (or more) milk
salt and pepper to taste

Directions:
Directions:
Sauté onion, celery, and garlic until they are transparent. Add diced potatoes and sauté 15 minutes, stirring occasionally. Add boiling water to cover all and bullion cubes. Simmer briskly until the potatoes are soft enough to mash. Add milk. Heat but DO NOT BOIL until the soup is a somewhat thick. Add salt and pepper. Garnish with chopped parsley.

This my mother's own recipe. It makes a hearty soup - perfect for a meal on a cold night (or a warm or hot night). I like to serve cornbread with this soup.
