2-Cups Sugar
1-Cup Shortening
2-Eggs
1-tsp. soda
1-tsp. vanilla
1-tsp. Cream of Tarter
1-tsp. salt
3- 1/2 cups Flour
1-Cup coconut, shredded.

Directions:
Directions:
Cream together sugar, shortening, and eggs. Add vanilla. Sift and add dry ingredients. Mix and make into loaf. Let stand in refrigerater at least two hours. Cut and bake in moderate oven until very light brown. Otherwise, the coconut will burn.
