9-1/2# oions, peeled and sliced
1-1/2 cups peeled garlic cloves
1/2 C. olive oil

Directions:
Directions:
In a large bowl mix half of all the ingredients and pour into a shallow, rimmed pan, 12x15x1".
Repeat process with remainder of ingredients.
Bake in a 400 degree oven until onions are limp and well browned, 1-1-1/2 hours.
Switch pan positions and stir fixture from pan sides into center with a wide spatual every 15 minutes.
Use as needed, see note below, or freeze in 1 C. containers for later use.

I use these for most soup recipies and many casserole recipes in this book. Just replace the onions and garlic cup for cup.
The roasting really enhances the flavor of teach recipe, and making a big batch at once simplifies life.
