1 cup sugar, divided or 35 packs of Equal
2 tsp. cinnamon
3 eggs
1/2 cup vegetable oil
1/2 cup plain yogart or applesause
1 tsp. vanilla
1 1/2 cups grated zucchini fresh or frozen
1 3/4 cups self-risen flour
2/3 cup chopped walnuts (opt.)

Grease 6-cup microproof ring mold. Sprinkle mixture of 2 tsp. of sugar/Equal and cinnamon over greased surface. Shake to spread evenly. Beat together eggs, remaining sugar/Equal, oil, yogart or applesauce, vanilla, and zucchini. Stir in remaining ingredients and mix well. Pour into prepared mold. Cook on 70 (roast) 15 minutes, or until toothpick inserted near center comes out clean. Rotate dish if bread appears to be rising unevenly. Let stand 10 minutes before removing from pan. Cool completely before slicing.
