6-8 medium red potatoes, cooked & diced
cup sour cream
cup Ranch dressing
cup bacon, crumbled
2 T chopped parsley
1 cup shredded cheddar cheese
2 cups cornflakes
cup butter, melted

Directions:
Directions:
Layer potatoes in greased 9x13 pan. Mix sour cream and dressing. Spread over potatoes. Sprinkle with bacon, parsley and cheese. Mix cornflakes and butter and put on top of casserole. Bake uncovered at 350 for 40-45 minutes.

Crush cornflakes in a plastic bag for less mess. You do not have to peel the potatoes.
