4 Whole Wheat English Muffins, split
1 medium Red Onion, diced
1 Red OR Yellow Bell Pepper, seeded and diced
1 C. shredded Deli Roasted Chicken
2 tsp. Hot Sauce
C. Barbecue Sauce
C. shredded Light Pizza Cheese Blend (Light Cheddar Cheese works too)
1 Tbsp. Chopped Fresh Cilantro

**Hint: You can just buy a package of sliced deli chicken in the grocery where they sell the pre-packaged lunch meat- this quantity works fine. If you want to be extra healthy, you can boil a fresh chicken breast instead and shred it- this greatly reduces the amount of sodium in the dish.

Preheat oven to 425 degrees.

Place the English muffins on a baking sheet and toast them for 6-8 minutes, then remove from oven and set aside. While those are toasting, spray a large non-stick skillet with cooking spray (or you can use a little extra virgin olive oil). Add the diced onion and bell pepper to skillet and cook until onion is tender and golden brown. Remove the skillet from heat and add in the chicken, barbecue sauce, and hot sauce and stir everything together.

Spoon the chicken mixture onto each of the English muffins. Sprinkle each with cheese, and then bake until the cheese is melted and they are heated through, about 5-8 minutes. Remove from oven, sprinkle each with fresh cilantro- serve immediately.

This is fast, healthy, and makes great leftovers. Its really important to use fresh cilantro rather than dried- it truly makes the recipe.
