16 oz. sharp cheddar cheese 16 oz. medium cheddar cheese 1 small onion, grated 1 c. mayonnaise 1 tsp. red pepper 1 c. chopped pecans 1 medium sized jar strawberry preserves
Lightly grease a ring mold, and sprinkle pecans on the bottom. Grate cheeses into a large bowl. Add grated onion. In a separate bowl, combine mayonnaise and red pepper. Add the mayonnaise mixture to the cheese and onion, and mix thoroughly. Press into a mold and chill (overnight if possible). Transfer to a serving dish and place preserves in the center of the ring. Serve with Ritz crackers.
