2-3 pounds Fresh or Frozen Prawns
1 Onion
1 small Leek
6 cloves garlic
1 Red Pepper
2 Shanghai Bok Choi
4 Stalks Celery
1 cup Green Beans
1 cup Spinach
1 cup chopped Mushrooms
1 cup Chicken Broth
1 can Coconut Milk
1 Lemon
Curry Powder to taste

Directions:
Directions:
Steam the Prawns until done. Remove shells and set aside. Saute Onions, Leeks, Garlic, Red Pepper, Mushrooms and Celery in Olive Oil.
Add the chicken broth,coconut milk, juice from 1 lemon and curry powder then bring to a boil. Add the remaining vegetables and cook until tender. Stir in the prawns and heat for 5 minutes. Serve over brown Basmati rice or yellow potatoes

Curry powder has a wide variation in both flavor and heat, so it takes some experimenting to find the right one for your family's palate. With the Coconut Milk and the lemon this could also pass for a faux-Thai recipe
