Puffs:
3/4c water
1/4c butter
1/4t salt
3/4c flour
3 eggs, lightly beaten

Filling:
8oz whipped topping
1/2c powdered sugar
1/2 t vanilla

Topping:
1/4c chocolate frosting
2T chopped pistachios

Directions:
Directions:
Preheat oven to 375. In saucepan, combine water, butter and salt. Bring to boil over high heat. Add flour all at once. Stir mixture vigorously about 1 minute or until mixture leaves sides of pan and forms into a ball. Remove from heat. Add eggs. Whisk until smooth and very thick.

Lightly spray a mini-muffin pan. Use a small scoop to scoop batter into cups. Bake 22-25 minutes or until deep golden brown. Remove from oven. Make a small cut into side of each puff to release excess steam. Remove puffs from pan and cool completely.

For filling, combine whipped topping, powdered sugar and vanilla. Mix gently until well blended. Pipe into center of each puff.

For topping, melt frosting and drizzle over puffs and sprinkle with chopped pistachios.
